Caballito Cerrero Chato

  • From a distillery in the Tequila zone comes this agave destilado that isn't really tequila or mezcal. Made from an agave called Chato which is a close genetic relative of Espadin, it's produced in a manner sort of in between tequila and mezcal. Cooked in a steam oven, wild fermented, and distilled in a hybrid copper and stainless steel still.
